Garden Fresh Tomato Sauce
(I know it's funny to see cans under the word fresh. They are the only non-garden fresh ingredients. Promise.)
These are the ONLY tomatoes I use for sauce. You can use another brand but they have to be Marzano. This type of tomatoe has a sweeter flavour. I love it! |
One of my university friends got me hooked on easy pasta sauces and fresh pasta. Those days in university were the best. We believed that even though we were poor students we would at least eat well when we could. We ate fresh cheeses, fresh pastas, and amazing produce whenever we had the chance. While living at home I never cooked. When I lived on my own for the first time my mother couldn't bear the thought of leaving me because she thought I would starve. Well I almost starved- the first year anyway. When we moved off campus I spent many nights at my friends apartments picking up what ever I could. Those moments were the imputus for my cooking journey.
Note:
I usually make my tomatoe sauce in very large quantities and then jar them. If you don't have time for jars just put them in regualr glass jars, (leave a little room) and freeze them. Let them thaw or microwave them as needed. So easy!

My mother plants a herb garden in our backyard. Basil and oregano are amongst my favourite herbs. The garlic above was from a farm in Zephry, Ontario. It was so fresh and as big as clementines. I have never seen garlic that big!

You Will Need:
-olive oil to cover the base of the pot
-1/4 teaspoon of chile flakes
-2 bunches of finely chopped garlic
-6 cans of Marzano tomatoes (whole) crush them with a hand blender
-Bunch of basil & oregano finely chopped (if you don't have fresh used the dry ones)
-salt and pepper to taste (I use white pepper)

Cook the chopped garlic in a pot with hot olive oil until golden brown. Don't be afraid. The garlic will get nice and tanned. Just don't let it get dark brown. Add crushed tomatoes and stir. Let it simmer for 5 minutes. Add basil and oregano. Stir and simmer for 5 more minutes.

Cool - great idea making it in large quantities and freezing it. I want to have a big garden some day and make and freeze stuff from the tomatoes. Nothing better than a garden fresh tomato! :-) Thanks for linking up on What's Cooking Wednesday! Take care!
